Orange Sour Cream Muffins

Ingredients
1 ¼ cups flour
1 cup sugar or Splenda
½ teaspoon baking soda
¼ teaspoon salt
1 egg
6 tablespoons applesauce
½ cup fat-free sour cream
3 tablespoons orange juice concentrate

Preparation
In a bowl, combine the flour, Splenda, baking soda and salt. In another bowl, whisk the egg, sour cream, applesauce, and orange juice concentrate. Stir into the dry ingredients just until moistened.

Spoon batter into a prepared muffin tin. Bake at 375 for 18-20 minutes. Makes one dozen.
