Whole Grain and Nut Pancakes

Ingredients
1 1/2 cups oats
1 1/2 cups wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups skim milk
1/4 cup applesauce
1 egg
1/3 cup Splenda
3 tablespoons chopped walnuts

Preparation
Grind the oats in a blender or food processor. In a large bowl, combine oats, wheat flour, baking soda, baking powder and salt.

In another bowl, combine milk, egg, applesauce, and Splenda. Mix wet ingredients with dry. Stir in nuts.

Lightly spray a griddle or pan and pre-heat. Ladle 1/3 cup of the batter onto the skillet; cook for 2 to 4 minutes on each side til brown.

1 pancake = 1 grain serving
