Ingredients
6 Roma tomatoes, halved lengthwise
1 tablespoon basil
1 tablespoon minced garlic
4 tablespoons sun-dried tomatoes (well drained)
1 teaspoon chili powder
Preparation
Spray a foil-lined jelly roll pan with non-stick spray. Place halved tomatoes face up on the foil. Sprinkly lightly with salt and pepper. Roast in 400-degree oven for 45 minutes.
Place roasted tomatoes with other ingredients in blender. Be careful with this hot mixture! Pulse until all is well blended. Serve over hot pasta.
